I’ve said it before. I hate to bake. I just happen to be good at it. I’m also not much of a sweet tooth person either, so I really have to be in the mood to bake, or have a general purpose.
My son was having a friend sleepover and I wanted to bake something for them, because his friends love when I cook anything for them.
I started going through the pantry and realized I just wanted to make a disgusting mess of sweet joy.
I concocted these on a Sunday morning at 7am. The boys woke up to fresh baked cookies, which is a major Mom score and I have retained my title as “Squad Mom”.
These cookies are soft and chewy on the inside, light and crispy on the edges and absolutely LOADED with “junk”. I dare you to eat just one!
Junk in the Trunk Cookies
Prep Time: 10 minutes
Bake Time: 8-10 minutes
Makes about 3 dozen
2 sticks salted butter
1 cup sugar
1 cup packed dark brown sugar
½ TBSP vanilla extract
2 cups all purpose flour
1 2/3 cup old fashioned oats
1 tsp salt
1 tsp baking powder
1 tsp baking soda
4 oz of milk chocolate, chopped in chunks
1 ¾ cups semi-sweet chocolate chips
½ cup M&M mini’s
2/3 cup of chopped walnuts or pecans
Preheat oven to 350 degrees.
In a large bowl combine all dry ingredients. Whisk together to combine and set aside.
In a standard mixer bowl, or large mixing bowl if doing by hand mixer or hand, cream together butter and sugars until well combined. Add eggs, 1 at a time, and combine completely. Add vanilla, and mix until combined.
Gradually add dry ingredients to wet ingredients until everything is completely and totally combined.
Using a mini ice cream scoop (cookie scoop) place dough onto well chilled cookie sheets (this helps the cookies to not spread). Bake for about 8-10 minutes. The cookies should look moist or damp in the middle.
Transfer to surface lined with wax paper and allow to cool completely. Store in an airtight container or gallon ziplock bags for a few days. However, they probably won’t last that long!
